I recently enjoyed perusing the range of cereal bars at the supermarket, each offering a unique combination of oats, fruit and nuts. These ingredients are the common stuff of muffins too but suddenly I realized my muffin collection was missing a popular flavour: peanut butter. So here is a new addition.

It’s such a treat when the soft summer fruits come into season and can be enjoyed in all kinds of delicious baking. My daughter and I did some experimenting with plums this week and we enjoyed this combination of plum and almond with a hint of lemon.

“You can please some of the people some of the time but you can’t please all of the people all of the time.” This certainly applies to sugar in muffins! Give the same muffin to different people and the responses will range from “too sweet” to “not sweet enough” or “just right”.
